Big Mozz hand-stretches fresh mozzarella cheese, sourced locally from Caputo Brothers Creamery in York, PA. We are a local NYC startup, and our team was selected to Zagat’s 30 Under 30 list for 2015. Our stretching class is the perfect way to learn the art of cheese making while enjoying delicious appetizers from our catering menu, and lots of wine.

Stretching

First we talk a bit about how we source our cheese curd and why it is special, and touch on the science behind what's happening when we stretch mozzarella.


Then everyone stretches mozzarella two times: first with a full pound of traditional American-style Mozzarella, and then with a pound of Caputo Brother’s Creamery’s cultured mozzarella.

Dine

We’ll also bring platters of the Big Mozz Smorgasburg and Catering menu, like our Mozzarella Sticky Bun: stretched mozzarella layered with prosciutto and rolled, then drizzled with honey and crushed pistachio.  Hopefully it will provide a little inspiration for your next try at stretching at home!

Class Format

Learn

Each student gets their own station with the classic tools of mozzarella making: a silver bowl, and a big wooden spoon.

 

You'll learn a bit about the science behind making mozz, while we pour the wine.



Stretch

Everyone stretches mozzarella two times: first with a full pound of traditional Italian-style Mozzarella, and then with a pound of Caputo Brother’s Creamery’s cultured mozzarella.


Dine

Sample your fresh mozzarella while also dining on platters of the Big Mozz Smorgasburg and Catering menu.


Bring the rest home, and try out some of our dishes yourself!
